Summer Peach And Tomato Whipped Feta Salad
Our first recipe for 2021! The last couple of weeks have been beautifully restful and typically, we've been doing lots of cooking and entertaining. A few months ago we moved our outdoor dining table from our front deck to our back deck, and it's been a game changer. Now we're talking about enclosing the front deck and turning it into a formal lounge room and library - but that's a whole other project we won't be properly looking into for a few years.
When we're both on holidays, we centre our time around two things - the beach and meals. When we're not at the beach, we're cooking in the kitchen together and it's our favourite thing to do. These holidays have seen us spend a lot of time cooking and we're excited to share a recent addiction to our ever growing family recipe book - our Summer Peach and Tomato Whipped Feta Salad. Ever since we (finally) bought a food processor, we've been able to create more exciting meals and we've been dreaming of creating a whipped feta salad with seasonal summer fruit. And this recipe is perfect for those balmy summer days when you're enjoying a home cooked meal with your family and friends around a long table - preferably outside if possible.
With this salad, it's essential the peaches and tomatoes are totally ripe so the delicious juices from the peaches and tomatoes lavishly bleed into the whipped feta. Try not making this salad if your peaches are hard, green or unripe (as they often are when you buy them from the supermarket). It's best to sit them in a bowl on your kitchen bench for a few days as they ripen. This salad is best kept simple, so we added shallot for some punch, toasted macadamias for some crunch and a sprinkling of local micro herbs from a farm in Eumundi. You can get micro herbs from most supermarkets but if you can't get your hands on any, watercress or hand torn basil leaves would be a perfect replacement. Read on for the recipe.
Ingredients
400g Danish feta
2/3 cup thick cream
3 tbsp extra virgin olive oil and extra for drizzling - we use the olive oil in Meredith's Marinated Goats Cheese
2 ripened tomatoes, cut into 8 slices
3 ripened peaches, cut into 8 slices
Shallot, sliced finely
3/4 cup macadamia nuts, toasted and crushed
Equipment
Food processor
Sharp knife
Small non stick pot/pan
Serving platter
Method
Combine feta, cream and olive oil in the food processor until it's smooth.
Spoon the whipped feta onto a serving platter and arrange the slices of tomato and peaches in an alternative pattern on top of the feta.
Garnish the salad with shallot, toasted macadamias and micro herbs.
Serve straight away and enjoy!
