Refreshing Iced Latte Slushie with Cocoa Whipped Cream

Like many people, as soon as I wake up, my first thought goes to coffee. There is nothing I love more than walking into our kitchen in the early morning, making a coffee and enjoying it in the peace and quiet on the lounge before the kids wake up. This relaxing time for parents is also known around the world as the calm before the storm. Jason makes cold drip coffee for us every couple of days, and we drink it all year round, even in winter. But recently I have been wondering if I could try something different - then the idea of making a refreshing Iced Latte Slushie sprung into my mind.

What I love about this recipe is that it has the same ingredients as your everyday coffee, but the preparation is a little different. You simply freeze your coffee into ice cubes, and blend the coffee ice cubes in a food blender with your milk of choice. You can make this with a cold drip coffee or cold brew, or you can make it with espresso, instant coffee or a hot long black. Any coffee will do! Personally, I love cold drip coffee because it's strong and doesn't have a bitter taste.

When I first made this Iced Latte Slushie, I was really surprised - it definitely needed a sweet element. Which was curious to me because I never add any form of sweetener to my coffee. I decided to elevate this delicious coffee slushie with a Cocoa Whipped Cream to put on top, and I love that it's so extra. It took a few goes to get the cocoa whipped cream absolutely perfect, and the key ingredient was adding a little vanilla essence. If you don't want to make the Cocoa Whipped Cream, that's totally ok - leave it out. If would like to add some sweetener into your coffee slushie, don't use a granulated sugar as it won't combine into the slushie well enough. I recommend a syrup like maple, agave, honey or sugar syrup.

I am so excited to share my refreshing Iced Coffee Slushie recipe.

Ingredients

  • 12 small ice coffee cubes 

  • 3/4 cup milk of your choice 

  • 300ml thick cream, whipped 

  • 2 tbsp unsweetened cocoa powder 

  • 2 tbsp vanilla essence 

Directions

  1. Place your coffee ice cubes and milk into a food blender. Blend until smooth. Pour into two glasses.

  2. Fold whipped cream, cocoa powder and vanilla essence gently (using a silicon spatula) until completely combined. 

  3. Top your Iced Coffee Slushie with a few dollops of Cocoa Whipped Cream. Enjoy straight away.

An extra note:

  • Some extra tips!

    • You will need to freeze your coffee in an ice cube tray ahead of time. Make a big batch and store the coffee ice cubes in airtight freezer bags so they're ready for your next refreshing Iced Latte Slushie.

    • Make sure you blend the coffee ice cubes and milk until it's completely smooth. This will avoid drinking down any clumps of ice.

    • If you don't want to make the Cocoa Whipped Cream, that's totally ok - leave it out.

    • If would like to add some sweetener into your coffee slushie, don't use a granulated sugar as it won't combine into the slushie well enough. I recommend a syrup like maple, agave, honey or sugar syrup.
