Date Night Oomite Carbonara

Where are my carbonara lovers at? I know you're out there and I know you're ready for a twist on this lusciously creamy classic. Enter: Oomite. The Oomite Story

The seed for Oomite was planted back in 2017, when my friend Katie Graham and Magdalena Roze both had the idea of making a 100% natural mitey spread packed with real ingredients and amazing flavour, and they both told Darren (Mag’s chef partner Darren Robertson) about it. They didn’t know each other then, so Daz connected them together and they decided to collaborate!

After almost two years of recipe testing (it's not that easy to make an all-natural, umami-packed, thick spread!), and many many loaves of sourdough and cultured butter, they made something they found delicious and addictive. Using premium, real ingredients was a given, but it was equally important for the talented ladies to get that mitey flavour. To be sure, they began testing it on chef mates, and when they began begging Katie and Mag's for more, they knew that it’s time to hit go! Hello Oomite! 

Their batches are small and hand-filled, and one of their ingredients is a very slow-fermented organic miso. Thankfully, Oomite is now available thanks to a partnership with Pepe Saya - their first retail product! Imagine the perfect amount of umami and tasty Oomite marbled through Pepe Saya butter - it's a match made in heaven. Ingredients

  • 1 tbsp sea salt

  • 2 large eggs and 2 large egg yolks, at room temperature  

  • 1/3 cup parmesan, grated

  • 1/3 cup pecorino romano, grated

  • 1 tsp sea salt

  • 1 tsp cracked pepper 

  • 100g Oomite x Pepe Saya Butter 

  • 4 long rashers of bacon, sliced into pieces about 1cm width x 3cm length

  • 400g spaghetti (100g per person)

Directions

  1. In a mixing bowl, whisk eggs, egg yolks, cheeses, sea salt and cracked pepper. 

  2. Bring to boil a large pot of water. 

  3. Set large pan on medium heat, melt 25g (1/4packet) of Oomite Butter. Add the bacon and sauté until the fat has just rendered and the bacon is on on the edge of crispy, but not hard. Remove from heat and set aside. 

  4. When the water has begun to boil, add pasta and (1 tbsp) sea salt. Cook until a bit firmer than al dente. Reserve 2/3 cup pasta water. Strain pasta and set aside. 

  5. Add the pasta to the Oomite bacon in the large pan on low heat. Toss around for a minute or so. Set aside in a large mixing bowl. Pour egg and cheese mixture over the bacon and pasta, and very quickly, stir to combine. Add only a small amount of pasta water and stir to combine for creaminess. If you think the pasta needs a bit more pasta water, add and stir it in. 

  6. Stir in 75g of Oomite butter until it melts and coats the pasta, and the pasta looks luxuriously glossy. Serve immediately. 

An extra note:

  • When serving, don't sprinkle any extra grated pecorino or parmesan on top. It doesn't need it. You shouldn't need to season the Oomite Carbonara with any extra sea salt or cracked pepper either.
