Holiday Feast: Apple Fennel Cabbage Slaw
This is the final side dish in our Holiday Feast series for Christmas 2020 - wow! In case you haven't seen our other recipes in this series yet, here they are:
The last side slash salad we served at our annual Christmas Feast was our Apple Fennel Cabbage Slaw. We knew we wanted a bit more of a creamy, crunchy, zesty side so we decided to create a Apple Fennel Cabbage Slaw, but since we love all things citrus and zesty, we created our very own dressing as well. This recipe is so easy and can be prepared the morning of your lunch or dinner, and the dressing can be prepared a few days in advance. It's very easy (always a win in our humble opinion) but most importantly, it's essential to create some texture alongside all these other sides we've created to compliment each other, and of course, our sumptuous Maple & Orange Glazed Ham. Ingredients
1/2 green cabbage, finely sliced
5 small green apples, finely sliced (we used ourmandolin)
1 fennel bulb, finely sliced (we used our mandolin)
Fresh chives, finely sliced
For the dressing
1/2 cup mayonnaise
1/2 cup buttermilk
1/4 dijon mustard
Sea salt and cracked pepper to season
Fresh chives, finely sliced
Method
To make the dressing, combine all ingredients into a bowl and whisk using a fork. Cover with cling film and set aside in the fridge until serving.
Combine cabbage, apple, fennel and chives into a large serving bowl and lightly toss using your hands.
When you are ready to serve, take the dressing out of the fridge and pour it all over the slaw. Gently toss using your hands.
Serve straight away and enjoy!
